Maximum Protein Mac ‘N Cheese (sort of)
One skill that will take you places in the kitchen is learning to make a mornay sauce (cheese sauce). It is not that hard. This one is modified and becomes not macaroni and cheese because I take the nutrition up a notch or two. If I told you it was the most amazing tuna noodle casserole you would ever eat, you would not watch the video.
Maximum Protein Mac ‘n Cheese
· ¼ cup butter
· ¼ cup flour
· 2 tsp dry mustard
· 1 tsp garlic powder
· Salt and pepper
· 2 cups milk
· 1 cup shredded cheddar
· 1 package pasta or noodles of choice (1 pound)
· 2 cans tuna
· 1 cup peas or 1 small can of peas
· Creole seasoning to taste (optional)
1. Melt butter in a medium size pot
2. Combine the next 4 ingredients in small bowl
3. Gradually add to melted butter and whisk
4. While whisking, add the milk and continue to stir until thickened
5. Do not boil, remove from heat just before
6. Add cheese and set aside
7. Cook pasta according to directions
8. Add tuna and peas to cheese sauce
9. Combine cooked pasta and cheese sauce in a pan
10. Use an oven safe baking dish. Sprayed with cooking spray
11. Sprinkle with creole seasoning
12. Bake at 350 for about 20 minutes.
13. Let rest 5 minutes and serve.
